Ingredients
- 2 eggs
- 1/2 cup olive oil
- 1/3 cup maple syrup
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 2-3 medium ripe bananas, mashed
- 1 3/4 cup whole wheat or gluten free flour
- 1/2 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup mini dark chocolate chips
Instructions
- Preheat oven to 325F
- Grease 9×5 inch loaf pan
- In a medium bowl, mix flour, cinnamon, baking soda and salt. Set aside
- In a large bowl, beat eggs, oil, syrup, milk and vanilla. Add in bananas then flour mixture and chocolate chips. Stir ingredients.
- Pour batter into greased pan. Bake for 50-55 minutes or until inserted toothpick is clean. Cool for 5-10 minutes.
