Fall is officially here in New England so it’s time to start making our favorite comfort foods. yummy egg muffins

Ingredients 12 large eggs 2 tbsp chopped white onion 1 cup chopped spinach tricolor tomatoes 1 cup shredded mozzarella cheese salt and pepper, to taste Instructions Preheat oven to 350F lightly spray 12 cup muffin tin with non stick spray in a large bowl, whisk together eggs and season with salt and pepper, to taste add onions, spinach, tomatoes and cheese and mix together add egg mixture halfway up into each tin of greased muffin tin bake for 20-25 minutes Enjoy! Ingredients 2 eggs 1/2 cup olive oil 1/3 cup maple syrup 1/4 cup almond milk 1 tsp vanilla extract 2-3 medium ripe bananas, mashed 1 3/4 cup whole wheat or gluten free flour 1/2 tsp cinnamon 1 tsp baking soda 1/2 tsp salt 3/4 cup mini dark chocolate chips Instructions Preheat oven to 325F Grease 9×5 inch loaf pan In a medium bowl, mix flour, cinnamon, baking soda and salt.
