Chicken Tenders and Fries – A Healthy Alternative for Your Family

Recently, I (the baby) was having a craving for chicken tenders and fries. I wanted to satisfy my craving but didn’t want to spoil the healthy pregnancy day I was having. To keep everyone happy, I created a dish that was so delicious and satisfying for not only Mom and baby but for my husband too!

Chicken Tenders

Ingredients

  • 2 large eggs
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • ¾ cup panko bread crumbs
  • ¾ cup shredded sweetened coconut
  • ½ cup whole wheat flour
  • 1 package of organic chicken tenders

Directions

  • Preheat oven to 375 degrees F and spray a baking sheet with cooking spray
  • In a large bowl beat the eggs, salt, pepper & garlic
  • In a large dish combine bread crumbs, coconut & flour
  • Wash and trim any fat off chicken
  • Soak chicken in the egg mixture for a about 5 minutes
  • Roll each tender with a fork in the dry mixture, pressing on all sides until completely coated and place on prepared baking sheet
  • Once all chicken tenders are on baking sheet, lightly spray the top of each prepared tender with cooking spray or drizzle with olive oil
  • Bake for 25 minutes, flipping halfway through

Sweet Potato Fries

Ingredients

  • 2-3 large sweet potatoes and olive oil

Directions

  • Wash the potatoes and microwave for 2 minutes, rotate then microwave again for 2 minutes to soften them up.  If needed, you can do another minute.
  • Slice the potato edges off and then slice the potatoes into French fries.  The thickness depends on your preference.
  • Spray a baking sheet with cooking spray and place potatoes on prepared sheet
  • Drizzle olive oil over sweet potatoes
  • Bake at 375 degrees F for 30 minutes, rotating halfway

Grilled Asparagus

Ingredients

  • Fresh asparagus
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • Olive oil

Directions

  • Wash asparagus then chop the edges off, about 2 inches
  • Spray a baking sheet with cooking spray and placed asparagus on sheet
  • Sprinkle spices and drizzle olive oil all over asparagus
  • Bake at 375 degrees F for 30 minutes, rotating halfway with tongs

Mommy’s Special Sauce

Ingredients

  • ½ tsp lemon juice
  • 2 tbsp pesto sauce
  • 1/3 cup mayo
  • 1 tbsp spicy brown mustard
  • ½ tsp salt
  • ½ tsp pepper

Directions

  • Add all ingredients in a small bowl and mix with a spoon until fully combined. 
  • Adjust the amount of ingredients to your liking, if you prefer more pesto over mayo or vice versa.

Enjoy it All!

  • Once all dishes are fully cooked, place on your dish as desired.
  • Top all prepared food with slivered almonds, dried cranberries and goat cheese. 
  • Add the special sauce to the top of your chicken tenders and use extra for dipping the sweet potato fries.
