Ingredients
- 12 large eggs
- 2 tbsp chopped white onion
- 1 cup chopped spinach
- tricolor tomatoes
- 1 cup shredded mozzarella cheese
- salt and pepper, to taste
Instructions
- Preheat oven to 350F
- lightly spray 12 cup muffin tin with non stick spray
- in a large bowl, whisk together eggs and season with salt and pepper, to taste
- add onions, spinach, tomatoes and cheese and mix together
- add egg mixture halfway up into each tin of greased muffin tin
- bake for 20-25 minutes

- P.S. they can be refrigerated for up to 4 days so make them now and save yourself some time when getting breakfast ready for the kids in the next few days!
