Egg Muffins – A Great Way to Save Some Time by Prepping a Few Days of Breakfast!

Ingredients

  • 12 large eggs
  • 2 tbsp chopped white onion
  • 1 cup chopped spinach
  • tricolor tomatoes
  • 1 cup shredded mozzarella cheese
  • salt and pepper, to taste

Instructions

  • Preheat oven to 350F
  • lightly spray 12 cup muffin tin with non stick spray
  • in a large bowl, whisk together eggs and season with salt and pepper, to taste
  • add onions, spinach, tomatoes and cheese and mix together
  • add egg mixture halfway up into each tin of greased muffin tin
  • bake for 20-25 minutes
  • Enjoy!
  • P.S. they can be refrigerated for up to 4 days so make them now and save yourself some time when getting breakfast ready for the kids in the next few days!
