These muffins provide a healthy and delicious alternative to the sugary, buttery, not-so-good-for-you muffins. These will keep you full and satisfied and won’t make you feel heavy throughout the day.
Ingredients
- 1 egg
- 3 tbsp water
- 1/2 cup mashed banana (3 bananas)
- 1/2 cup applesauce
- 1/2 cup greek yogurt
- 1/4 cup maple syrup
- 1 1/4 cup oat flower (grind oats in blender to make oat flower)
- 1/2 cup quinoa flakes
- 1/2 cup blanched almond flower
- 1/4 cup coconut sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Heat oven to 350 degrees
- Grease a 12 cup muffin tin and set aside
- In one bowl, beat together banana, apple sauce, yogurt, syrup, vanilla extract and egg
- In a separate bowl, whisk together the dry ingredients
- Add dry ingredients to wet and stir thoroughly to combine
- Fill each cup 3/4 of the way full
- Bake for 25 minutes
